Vegan Chocolate Peppermint Cookies

Ingredients

Dry Ingredients

1 ¼ cups Gluten-free oat flour (organic)
¼ cup Unsweetened cocoa powder
½ teaspoon Baking Soda
½ teaspoon baking powder
¼ teaspoon salt

Wet Ingredients

¼ cup + 2 tablespoons melted Coconut oil
¼ cup Coconut sugar
¼ cup maple syrup
2 each flax eggs (2 tablespoons ground flax + 6 tablespoons water whisked together, set for 10 minutes)
1 teaspoon pure peppermint extract

Add-in Ingredients

1 cup vegan chocolate chips

Instructions

Preheat oven to 350 degrees
Line a baking sheet with parchment paper.
In a medium bowl, whisk together all the dry ingredients.
In a large bowl whisk together all the wet ingredients. Whisk until thoroughly combined.
Add the dry ingredients to the wet ingredients. Whisk until you get a sticky spft dough like mixture.
Using a cookie scoop scoop about 2 tablesoons of cookie dough on baking sheet. Using a fork flatten the cookies into a round disc. They won't spread much in baking.
Press chocolate chips into the top of cookies.
Bake for 12-14 minutes.

Notes

Store in an airtight container for 2 weeks

Freeze for 1-2 months. Thaw out 20 minutes before serving.
