
Baked Mixed Vegetable Curry
Ingredients
1 head Cauli Flower (small,chopped)
3 Large Carrots (diced)
1 Medium Tomato (chopped)
1 Red Pepper (chopped)
1 Yellow Pepper (chopped)
1 Green Pepper (chopped)
1/4 cup of Tomato Paste
1 medium Onion (chopped)
5 cloves of Garlic (finely chopped)
1 tbsp of Ginger (finely chopped or grated)
1 tsp Garaam Masala
1 tbsp Tumeric
1 tsp Cumin Powder
1 tbsp of Coconut oil or Avocado Oil
Salt (to taste)

Ingredients

- 1 medium Onion (chopped)
- 5 cloves Garlic (finely chopped)
- 1 tsp Garaam Masala
- 1 tsp Cumin Powder
- 1 tbsp Ginger (finely chopped or grated)
- 1 tbsp Tumeric
- 1 tbsp Coconut oil or Avocado Oil
- Salt (to taste)
Instructions
- Mix all the ingredients together. You really need to make sure that the vegetables get evenly coated with the spices.
- Place in a baking dish and cover with foil.
- Bake ate 325f for 1 ½ hours. Uncover and bake another 20 min.
- Mix very gently…the cauliflower will crumble on you
- -Serve with nann, roti, or extra for extra protein…over a bed of quino with some yogurt!!
