Layered chickpea chaat dip with Greek yogurt, chutneys, pomegranate and sev

Layered Chickpea Chaat Dip: An Easy Diwali Party Appetizer

Your next Diwali party hit: a colourful layered chickpea chaat dip with a spiced chickpea base, crunchy vegetables, creamy Greek yogurt and sweet-tangy chutneys. Finish with sev, papdi and pomegranate for all those chaat flavours in one scoop.

This version uses Greek yogurt for its creamy layer and fresh kachumber for crunch. It is vegetarian and easy to assemble with canned chickpeas and ready-made chutneys.

Prep: 25 minutes   Cook: none   Serves: 8 as an appetizer
Dish: a shallow 10–11 inch oval serving dish, or a similar 1.5–2 litre dish.

Ingredients

Spiced chickpea base

  • 3 cups cooked chickpeas, drained and rinsed (about 480–500 g; roughly 2 standard 398 mL cans, depending on drained yield)
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon chaat masala
  • 1/4 teaspoon Kashmiri chili powder, optional
  • 2–4 tablespoons cold water, as needed
  • Salt to taste, starting with a small pinch; chaat masala is already salty

Fresh vegetable layer

  • 3/4 cup finely diced, deseeded tomato
  • 3/4 cup finely diced, deseeded cucumber
  • 1/4 cup finely diced red onion
  • 2 tablespoons chopped cilantro

Creamy yogurt layer

  • 1 1/2 cups thick plain Greek yogurt (2% or 5%)
  • 1/4 teaspoon ground cumin
  • A pinch of salt, to taste

Chutneys and toppings

  • 3 tablespoons mint-cilantro chutney (see quick option below)
  • 3 tablespoons sweet tamarind chutney
  • 1/3 cup pomegranate arils
  • 1/4 cup fine sev
  • 4–6 papdi, lightly crushed
  • 2 tablespoons chopped cilantro
  • Extra papdi, naan dippers or pita chips, for serving

How to make it

  1. Make the base. Add chickpeas, lemon juice, olive oil, cumin, coriander, chaat masala and optional chili powder to a food processor. Add 2 tablespoons water and pulse to a thick, spreadable mash. Leave a little texture. Add more water a teaspoon at a time only if needed. Taste and adjust salt.
  2. Prepare the vegetables. Pat the deseeded tomato and cucumber dry with a clean kitchen towel, then combine with onion and cilantro. Do not salt this mixture ahead of time; salt draws out water.
  3. Season the yogurt. Stir the Greek yogurt with cumin and a small pinch of salt. Keep it thick; do not thin with water.
  4. Layer. Spread the chickpea mash in the shallow dish. Scatter vegetables evenly over the base, then gently spoon and spread the yogurt over them. Drizzle with green and tamarind chutneys.
  5. Finish just before serving. Sprinkle with pomegranate, sev, crushed papdi and cilantro. Serve with extra papdi, naan dippers or pita chips so each scoop gets a little of every layer.

Quick mint-cilantro chutney

Blend 1 packed cup cilantro (tender stems are fine), 1/4 cup mint leaves, 1 tablespoon lemon juice, 1/2 small green chili (optional), 1/4 teaspoon ground cumin and a pinch of salt. Add cold water 1 teaspoon at a time, using just enough to blend into a thick sauce. This makes approximately 1/3 cup; use 3 tablespoons in the dip and refrigerate the rest separately.

What to eat it with

Papdi gives the most classic chaat-style bite. Mini naan, toasted pita chips and sturdy tortilla chips also work. For a vegetable option, serve with thick cucumber rounds or mini sweet peppers.

Make-ahead tips

Prepare the chickpea base, seasoned yogurt and green chutney up to a day ahead and refrigerate separately in covered containers. Chop and dry the vegetables on the day you serve. Assemble shortly before the party and add sev and papdi at the last minute to keep them crisp.

Keep the dip refrigerated until serving, and return leftovers to the fridge promptly. Refrigerate covered leftovers for up to 2 days; the vegetables may release water and crunchy toppings will soften. Add fresh toppings when serving again. Avoid leaving this yogurt-based dip at room temperature for more than 2 hours.

Swaps and notes

  • No food processor? Use very soft cooked chickpeas and mash thoroughly with a potato masher. The base will be chunkier.
  • Dairy-free: use a thick, unsweetened plant-based yogurt you enjoy.
  • Gluten-free: check chaat masala, chutneys and sev labels; use certified gluten-free crackers instead of wheat papdi or naan.
  • Prefer mild? Skip the chili powder and use a mild green chutney.
  • Chutney shortcut: store-bought green and tamarind chutneys work well. Start with less if your chutneys are especially hot or sweet.
