Chocolate Peanut Butter Cups

  1. In a small bowl combine the peanut butter, coconut oil, vanilla, first 2 tablespoons of honey and nuts. Mix until well combined.
  2. Drop heaping teaspoon amounts into mini cupcake pans. Freeze.
  3. Chop chocolate into small pieces and place in frying pan on low heat. Mix in honey. You need to be very careful not to burn the chocolate. Once the chunk get really small I usually remove from heat and let it melt in its own heat.
  4. Drop chocolate by the teaspoon over your now frozen nut mixture and place back in the freezer. Freeze for about ½ hour and use a butter knife to pop them out. Store in fridge or freezer.
